  • Entropy; full bodied Shiraz from the Barossa

    Picked late during harvest, crushed and fermented for near seven days on skins in Maranaga, Barossa, and tucked away to age two years in seasoned oak barrels. This heavy shiraz is not as pretty as it looks… Barrel age and fruit come together to provide a heavy punch, but still balanced and jammy full bodied shiraz, that signifies the intense style of the region.

  • Entaglement: a bold, dry Rosé made from top tier Shiraz ferments

    Stolen from top tier shiraz ferments about one and a half days into fermentation, to give a gentle colour, and texture.  Cold soaked in an old milk vat to sleep and slowly bubble away before finishing its secondary malolactic life in seasoned oak barrels for almost nine months. Bolder acid, texture and dryness, and a touch of candied watermelon on the finish.

  • Annihilation: Naturally bottle fermented sparkling pet nat shiraz

    Carefully pulled from the rose ferment after cold settling whilst still fermenting with the perfect amount of residual sugar needed for secondary bottle pressure/fermentation. A true pet nat is a dangerous game of waiting until that precise moment, and hand bottled within the hour. To leave a pretty expression of a naturally carbonated, deliciously fruity and fresh wine. Natural malic acid still captured in the wine at bottling makes a great pineapple/tropical fruit character pop out, that makes this wine very fun and summery.tem description

  • Equinox: Light, clean and crisp, handpicked 100% Mataro from Kalimna Barossa.

    Handpicked in Kalimna, Barossa by Charlie and handmade from start to finish, only the best parcels of fruit make it into this wine. Picked while still relatively low in sugar, compared to many Mataro’s of the Barossa. This wine is made to be light and bright. Single barrel, 100% Mataro, and my 100% my favourite creation thus far. Slight gaminess from the variety itself, and a lighter expression really elevates is natural bubblegum playfulness with good food. Made with good intention to pair with a lot of different lighter proteins and spice. But would still stand up and face off with a fattier red meat and win comfortably.
