Stolen from top tier shiraz ferments about one and a half days into fermentation, to give a gentle colour, and texture.
Cold soaked in an old milk vat to sleep and slowly bubble away before finishing its secondary malolactic life in seasoned oak barrels for almost nine months. Bolder acid texture and dryness, and a touch of candied watermelon on the finish.
